Peach & Raspberry Breakfast Muffins

PEACH AND RASPBERRY BREAKFAST MUFFINS

INGREDIENTS:

1 cup Muesli
1 cup Spelt Flour
1/4 cup yoghurt
2 & 1/2 teaspoons baking powder
1 Egg
1/2 cup rapadura sugar or 1/3 cup honey
60g butter (melted & cooled)
1 Cup diced peach/nectarine/raspberries

2 Tblsp coconut, 1/2 tsp cinnamon,
2 Tblsp rapadura, 1/4 cup almonds or walnuts (chopped)

METHOD:

  1. Soak Muesli, spelt, yoghurt & 40ml water in fridge overnight.
  2. Next morning pre-heat oven to 170 C (fan forced).
  3. Add baking powder, egg, rapadura/honey, butter & fruit.
  4. Place into muffin cups & sprinkle with topping.
  5. Bake for 15-25 mins
  6. Enjoy!
