PEACH AND RASPBERRY BREAKFAST MUFFINS
INGREDIENTS:
1 cup Muesli
1 cup Spelt Flour
1/4 cup yoghurt
2 & 1/2 teaspoons baking powder
1 Egg
1/2 cup rapadura sugar or 1/3 cup honey
60g butter (melted & cooled)
1 Cup diced peach/nectarine/raspberries
2 Tblsp coconut, 1/2 tsp cinnamon,
2 Tblsp rapadura, 1/4 cup almonds or walnuts (chopped)
METHOD:
- Soak Muesli, spelt, yoghurt & 40ml water in fridge overnight.
- Next morning pre-heat oven to 170 C (fan forced).
- Add baking powder, egg, rapadura/honey, butter & fruit.
- Place into muffin cups & sprinkle with topping.
- Bake for 15-25 mins
- Enjoy!
